Strawberry Sandwich
With strawberry season at its peak, and a big batch of the berries in my fridge, I made this sweet, non-traditional sandwich from Eating Well. I used vegan cream cheese and didn’t have any orange zest, which I’m not a huge fan of anyway. This sandwich would be great as part of a picnic lunch, but I chose to eat mine for a satisfying breakfast. It has a well rounded combination of whole grain, protein, and fruit – that’s the best breakfast in my book!
Ingredients:
1 tablespoon reduced-fat cream cheese (or vegan cream cheese like Tofutti)
1/4 teaspoon honey
1/8 teaspoon freshly grated orange zest
2 slices very thin whole-wheat sandwich bread
2 medium strawberries, sliced
Combine cream cheese, honey and orange zest in a bowl. Spread bread with the cheese mixture. Place sliced strawberries on 1 piece of bread, top with the other. (These were the Eating Well instructions. Save yourself from washing an extra bowl and spread the cream cheese on the bread, top with strawberries, drizzle with honey, and top off with the other slice of bread. It’s a sandwich, after all. Let’s not make this any more complicated than it has to be!)
