Spiced Avocado Spread
For the few months I lived with Toni, avocados were a staple in our fruit bowl. So when I saw a delicious looking avocado spread in Hallmark magazine, I ripped it out and stuck it to our fridge to remind us to recreate it. With our massive file of recipes we wanted to try, its no wonder we never got to this one. So when Funk brought home a bag of avocados this week, I was excited to pull the recipe off the fridge, where it has been for the past 5 months.
Spiced Avocado Sandwich Spread
2 Haas avocados, halved, pitted and scooped out
1T lime juice (we only had lemon juice)
1t honey
1/2t chipotle chili powder
1/2t salt
In medium bowl, combine avocados, lime juice, honey, chipotle powder, and salt. Gently mash with a fork.
Makes 1.5 cups. Each ¼ cup has 80 calories, 7g fat, 5g carbs, 3.1g fiber, 1g protein, 198mg sodium
I ate this spread on some toasted Naan bread with seasoned veggies on the side for a quick and light dinner, while Funk used it as a chip dip and commented that it was “really gooOOOOoood!” I’m sure Toni would approve.
This is a great flavor change from traditional guacamole. The honey just adds a tinge of sweetness, but the salt balances that out and there is a slight spice kick from the chipotle. Avocados are jam-packed with heart healthy unsaturated fats and fiber. This would be a great topping for any chip or a healthy way to make a boring sandwich more enticing. Let me know if you try it!
