Solbar at Solage in Calistoga, Napa Valley
Last week Funk and I spent a wonderful week on vacation in Northern California. (Sneaky how I still kept all my blog posts coming, huh? Don’t worry, I was most certainly NOT blogging while on vaca!) We started off the trip by driving right up to Calistoga, a little sleepy-town in Napa Valley
. Calistoga is known for it’s mineral water hot springs and mud baths, both of which we tried at the spa (mud baths are verrrryyyy unusual, but once you get used to having mud everywhere, they’re sublime). We absolutely loved this quaint little quiet town, and our first night in Calistoga happened to be one of the highlights of our whole trip.
We went to Solbar restaurant at the Solage Luxury Resort for dinner. It was tucked away on the Silverado Trail in a beautiful setting. Each private room even had two bicycles at the front step for guests to ride around town! We ate on the outdoor patio alongside a sparkling pool and toasty fireplace. While we dined on one of the most amazing meals we had ever had, (a pan seared Pacific halibut with sugar snap peas, shishito peppers, ginger carrots and cashew vinaigrette for F
unk and some ahi tuna with chantrelles, blue lake beans, butter beans and salba reduction for me) we enjoyed a bottle of white from a local vineyard, Homage, in Calistoga. As if that meal wasn’t perfect enough, we topped it off with a Black and White Cobbler for 2 with blackberries and pope valley white peaches with a sweet biscuit crust and vanilla ice cream. Oh. My. Gooooodness. We basically licked the plate clean.
