Hummus Pizza
The other day my friends Pam and Jess came over to help me assemble some wedding programs and favors. In return, I promised to feed them! But after a super busy day running around, I didn’t have time to whip up anything elaborate. So, I threw together some simple ingredients and came up with hummus pizza! I used hummus in place of the sauce and cheese, so I guess technically it wasn’t a real pizza, but you get the idea. You could always use hummus as a base and top it with pizza sauce if you wanted.
Ingredients:
Prepared pizza crust – mine was already seasoned with Italian herbs
1/2 container of hummus – any flavor you like
2 roma tomatoes, thinly sliced
1 zucchini, thinly sliced
Dried oregano
Assemble the pizza with hummus first, then veggie slices and a dash of dried oregano. Bake it in a 350 oven for about 10 minutes, then slice and serve!

It was the perfect finger food to enjoy as we were knee deep in wedding things. I’m finding as the wedding inches closer, and my days are jam-packed with things like re-creating my homemade cake topper that I spent 6 months making and then, ahem, lost, I’m relying on super simple, stress-free but healthy dinners to get us through the next few weeks. Have any other ideas for me?

Ahhhhhh I am so sad that you couldn’t find the cake toppers. I bet they show up somewhere after the wedding. That always seems to happen. If not may they rest in peace. Thanks for the pizza. It was delicious!!!
