Hawaiian Rice with Pineapple
Things are starting to feel summery in Boston! With the warmer weather upon us, and some upcoming vacations I’ve been daydreaming about (Arizona! Italy!) I wanted to make a meal that had hints of a hot weathered getaway. This Hawaiian Rice with Pineapple did the trick.
Ingredients:
1 cup brown rice (makes about 2 cups)
1 pineapple, sliced and diced
1/2 bag frozen mixed veggies
1 pack Nasoya super firm cubed tofu (I used 1/2 pack)
1/2 cup Trader Joes Island teryaki sauce
1/2 cup light coconut milk
S & P to taste
Start off by cooking your rice, be it in a rice cooker, stovetop, or microwave using Trader Joes frozen brown rice like I did.
Meanwhile, slice and dice your pineapple. This may feel like a strenuous workout. It is. Fortunately the pineapple I bought had handy cutting instructions.
In a saucepan, add pineapple, mixed veggies (about half of a bag of frozen veg), cubed tofu, teryaki sauce and coconut milk. When the veggies defrost/cook, add in the rice and simmer for about 10 minutes. Add sea salt and freshly cracked black pepper to taste.
Alooooha. the tropical pineapple and creamy coconut milk had me in Hawaiian heaven. Give it a go and transform your kitchen into a tropical getaway. Want to make it easier? Buy frozen pineapple, or canned pineapple and drain the juice. Want to make it even tastier? Pair it with a pina colada.















What a great combination! I’ve only thought to make mango sticky rice in this weather, but pineapple is genius!
